Our Parisian ancestors lived in an overpopulated, unhealthy and smelly capital. Yearning for fresh air and entertainment, they often went, in the company of friends or fellow‑craftsmen, as lovers or families, to numerous places of pleasure, among which guinguettes held a special place.
From the XVIIIe siècle the first guinguettes appeared at the barriers of Paris: Vaugirard, Porcherons, Montmartre, Belleville, etc. Later they opened in the villages of the nearby suburb, and then on the banks of the Seine and Marne, in particular thanks to the development of the chemin de fer. These open cabarets, where one could drink and eat to one's heart's content at a moderate price and where the lyrical‑bachelor societies, the so‑called “goguettes”, were located, offered many pleasures. After a good lunch, balls opened, allowing people to become acquainted with fashionable dances. Thus, in the XIXe siècle the pleasures of dance became, in the warm season, inseparable from those already offered by guinguettes.
